Sigona's Fused Extra Virgin Olive Oils
Fused olive oils are made by crushing together the ingredients together at the same time. For example, our Greek thyme fused olive oil is made by combining green Koroneiki olives with freshly cut thyme. The two ingredients are crushed and then mixed in the malaxer, which fuses the flavors together. The end result is an oil that has a more intense, fresh flavor, and it picks up a little color from the other ingredient too.
